These chicken and vegetable skewers are delicious and an easy way to get a range of protein and vegetables on your plate. The marinade makes the chicken super taste and it’s actually quite flavoursome just by itself. But that sauce is bright and delicious too and kind of takes things to a new level.
TOFU AND KALE CREAMY KORMA CURRY
I had to put the word creamy in the title because otherwise this guy just screams HEALTH and I didn’t want to scare everyone off. Plus it is creamy so why wouldn’t I mention that? This curry is delicious! I’m a big fan of tofu these days and this curry comes together pretty quickly with a big punch of flavour.
MOCHA CAKE WITH COFFEE CREAM ICING
This is a super impressive looking birthday cake that is way easier to make than it looks!! It’s refined sugar free and gluten free and has a rich sort of mousse cake like texture without being cloyingly sweet. A birthday cake amazing enough for my best friend, and a little bit good for you too! Happy Birthday Anz x.

CINNAMON BRIOCHE BLISS BALLS
These taste like a cross between cinnamon brioche and cinnamon donuts. The coconut, vanilla and cinnamon give them sweetness (enhanced with a little maple syrup, or dates if you’re not a fructard!) and the dark roasted almond butter adds a toasted richness that makes them extra delicious.
FRAGRANT COCONUT POACHED SALMON WITH RED LENTILS
This is the perfect healthy winter comfort food. It’s light but filling and full of great immune boosting ingredients. Plus the warm spices and broth will have you feeling toasty from the inside out. Plus, it’s a one dish kind of meal – my favourite!
SOY BRAISED SHIITAKE MUSHROOMS WITH GREENS AND BROWN RICE
There’s something meaty about mushrooms in both their texture and flavour that makes them the ideal thing to eat for a vegetarian meal. This recipe is subtle and easy to prepare and produces delicately flavoured mushrooms with that perfect texture.

This week has been full of fun things with some great new recipe son the blog, naturally I’ll be including them in this weeks meal plans! One of them is my favourite thing I’ve made in a long time because it uses one of my favourite ingredients… noodles!
NO BAKE SESAME CARAMEL SLICE
With a choc, coconut almond base, tahini caramel middle layer and raw chocolate topping this slice is all the good things. It’s gluten free and sweetened with a little maple syrup to make it a not so naughty treat.
ROAST PUMPKIN, TOMATO AND THYME PASTA BAKE
Is there anything more cosy or comforting than a pasta bake? It’s also a super easy way to make a filling vegetarian meal! All you need is some sort of green salad on the side and dinner is sorted.
