You all know by now that I’m pretty pro the cauliflower. Especially roasted, the texture is the best: tender on the inside, crispy on the outside. Plus, it’s a magnet for other delicious flavours. It’s so good that you can have this salad without the salmon and it’s still DELICIOUS. But the salmon is amazing too! This is basically the perfect warm winter salad.
MEAL PLANS WEEK 25
This weeks meal plans are continuing along that waste less theme. The recipes have cross over ingredients but different flavour profiles and should leave you with enough for lunches if there’s just 2 of you! This is how I cook at home, using ingredients form one recipe to create the rest.
CHEESY POLENTA WITH FRIED EGGS, BLISTERED TOMATOES AND GREENS
I love meals that you can eat any time of the day, take minimal effort and are relatively cheap to make! This is one of those meals. I’ve had it for lunch, dinner and brunch (so basically breakfast) and it’s perfectly satisfying every time! This also means I’ve sort of posted two brunch recipes this week… everyone loves brunch though right?
PEANUT BUTTER WAFFLES WITH BANANA SOFT SERVE
Waffle Wednesday is back!!! Mostly because I felt like it was time for another waffle recipe! These are excellent for brunch or you can make them a little smaller and have them as a dessert. They’re gluten free and have a great texture too!
CHICKEN ORECCHIETTE SOUP WITH PARMESAN AND LEMON
I was going to call this chicken noodle soup, because any short thicker style pasta will work. But, I love it with orecchiette the best so let’s give those little ears of pasta a starring role in the recipe name. They deserve it.
MEAL PLANS WEEK 24
This weeks meal plans have arrived and they’re delightful! I’ve included notes on how to cut down on waste by adjusting the recipes, such as using green cabbage for both recipes that call for cabbage this week. I’m all for adapting recipes to suit your needs, and the contents of your fridge.
MISO SESAME ROASTED CAULIFLOWER AND PUMPKIN GRAIN SALAD
Yum yum yum! This salad is warm, and comforting and full of flavour. It’s also loaded with vegetables and totally winter appropriate. The crunchy toasted coconut, crispy bits of roast cauliflower and caramelised pumpkin are a killer combo. Especially with miso and sesame paste coating it all. Yes, yes, yes.
CRISPY CHICKEN BURGERS WITH PARMESAN SLAW AND SPICY MAYO
I’m so excited to share these with you. I was meant to post a vego recipe today (which I’m also super excited about) and these tomorrow but these are like, everything. So I’m sharing early. Crispy chicken burgers. Crispy chicken burgers are one of my favourite indulgences. But these one’s aren’t fried, and are filled with light and tasty slaw and a spicy sauce. If you choose a gluten free bun they’re also GLUTEN FREE. And full of goodness thanks to the crunchy almond coating on them.
PRAWN AND PUMPKIN YELLOW CURRY (FROM SCRATCH IN 45 MINS!)
It’s winter so I’m curry obsessed at the moment and after trying the most delicious prawn yellow curry at Rick Shores I wanted to go ahead and make my own. From scratch. In less than an hour, because what’s life if you don’t challenge yourself?

This week has been a fun one in the kitchen, with delicious cakes, yummy curries and even more things to come next week. The meal plans this week definitely reflect this as well as my continuous push to wasting less food and using similar ingredients across the week, but don’t worry this doesn’t mean everything will taste the same!
