The long weekend has been full of relaxing beach times for me and not thinking about food prep… but it’s that time again and the best way to get my week on track is planning it a little in advance. For me that usually means planning what recipes I’m testing and writing these meal plans based for you!
Farfalle with Asparagus, Caramelised Leeks and Lemon
This is a simple and delicious vegetarian pasta that is full of fresh flavours. The sweet leeks are so good with the acid from the lemon and the creamy saltiness of the parmesan. It’s all kinds of good.
Chicken and Mushroom Larb Style Salad Lettuce Cups
This is the perfect light dinner that’s easy to make way more filling with a few little twists. Plus they’re full of way more vegetables than you’d normally get in a larb salad so that’s a win too. It’s sort of like san choi bao but with larb flavours.

Broccoli and Feta Dip
This dip is so flavoursome, step aside spinach dip broccoli and feta dip is where it’s at! It’s got this delicious sharpness from the feta and the freshness of the broccoli and lemon that together make it addictive.
Tahini Double Chocolate Skillet Brownie
Wow. This is a good one. Fudgey and delicious and best eaten warm straight from the pan. It’s also really quick and easy to make with no fancy equipment needed. It’s the kind of dessert you’ll dream about and it’s gluten free if that’s a thing you need!
Tomato and Parsley Salad with a Miso and Extra Virgin Olive Oil Dressing
That title pretty much sums up this super simple salad entirely. But it also probably has you scratching your head going, but why miso and tomatoes? So hear me out.
Meal Plans Week 50
Ummm so we’re already halfway through january and that’s a little crazy. I’ve already got my first illness for the year which is just fabulous. Actually, it’s not even that bad and my body seems to be doing it’s thing and fighting in just fine as long as I keep fueling it with the good stuff. So get ready for the good stuff, lots of vibrant colours as healthy fats this week!

These are so simple I’m almost embarrassed to post the recipe. Minimal ingredients but maximum flavour and the perfect thing on hot summer days or to grab for a light and yummy dessert.
Potato, Pea and Radish Salad with a Mustard Dressing
The flavours and textures in this potato salad make it such a winner and the perfect thing to bring to a picnic or have as a side with any summer dinner. That salmon recipe from yesterday would be great with this! As there’s no mayo it’s fresh and light and the crisp radishes and sweet peas really get to shine through.
