The world has gone a little crazy since my last blog post and our lives are all being impacted the pandemic. Almost everyone I know, knows someone (or has experienced one of the following themselves) that has either been forced to self isolate post holiday, made redundant, had to cancel a wedding or other celebration or had all their work cancelled. These things have all happened to my nearest and dearest. Perhaps you’r simply getting prepared for a 2 week potential isolation if something happens in your network? With all this going on, I thought a little reminder of yummy things you can batch cook was in order.
Dark Chocolate Mousse with Passionfruit Cream (Vegan)
Easter is so close now and the shops are filled with chocolate and hot cross buns… and I’m way more interested in the chocolate! I often make chocolate mousse for events and have been trying to come up with a dairy and egg free version and I’ve finally nailed it! And there’s no avocado in sight.

I’ve spent the last week getting over a sinus infection and having a long weekend to get better gas been fabulous… if a little boring! But I’ve also discovered two fabulous series: Cheer (Netflix) and The Outsider (Foxtel) so I’ve managed to stay entertained!
Vegemite Ramen Noodles with a Ginger and Sesame
This is a bit of a trash recipe title isn’t it? Vegemite on noodles is as basic as it gets but I’ve fancied it up for you and made it extra delicious. This is the food I crave when I’m feeling a bit under the weather, and my current sinus infection situation has me cooking like a basic bitch.

I had another little hiatus while I got busy with work and fun times (a dear friend’s hen’s weekend last weekend!). But I’m back! I realised when I’m busy it feels way harder to stick to the vegan until 6 thing, as I have less time to get organised so this week I’m focusing on things that I’ve been eating for breakfast and lunch that we’re just EASY.
Olive Oil and Tahini Chocolate Chip Cookies
These cookies are soft, chewy and vegan. I’ve been missing having cookies to eat uring the day and love a simple chocolate chip cookie that’s soft and a little chewy. Although making myself a vegan cookie is probably not the best idea… I was just not eating cookies there for a bit.

I had such a lovely week this week! Busy but totally rewarding too. And by organising myself at the beginning of the week the new changes to my diet didn’t feel hard at all!
Tofu and Cashew Noodle Stir Fry
This dish is a firm favourite (get it cos it uses firm tofu? I am the worst!) and uses the umami goodness of mushrooms and soy sauce to amp up the flavour dial on tofu. The result is a delicious stir fry with flavour and texture in every bite, and it’s vegan to boot.

This is the second addition of the ‘eat less animal products’ meal plans and I’ll be going into my third week of eating vegan until dinner… so far so good!
Mushroom ‘Carnitas’ Tacos with Fried Jalapeno and Cashew Lime Crema
New recipe time! These mushroom tacos have so much flavour and texture and are completely vegan. Simple to make and I’m calling them ‘carnitas’ as they have the texture of my favourite kind of carnitas taco… when the pork has been tossed on the grill before serving and got delightful crispy edges.
