It’s time for another great pasta recipe! This one tastes like summer with juicy sweet corn, fresh cherry tomatoes, loads of basil and pesto and all finished with creamy buffalo mozzarella. Yum! I’ve been really into pasta lately. I try to limit it to once a week but sometimes I want to have it twice because there’s just so many different sauce variations you can do and it’s such a great low effort meal. My solution? Zucchini noodles! But not just zucchini noodles, it’s got to be a mix of REAL pasta and zoodles so I’m still satisfying those carb cravings.

Welcome to 2017! I thought due to the New Years resolutions I’m sure have happened I should start things off for the year with a salad. A delicious, filling, nutritious salad with smokey grilled eggplant and a creamy tahini dressing – it’s a good one!

This salad is so pretty and full of flavour. it combines a couple of my favourite things… hummus and cauliflower. I’ve been really into loading roasted cauliflower onto hummus lately and then scooping it all up with some flat bread… or just a fork. But I felt I could make the whole thing look less beige. So now we have this.

In case you’ve just arrived here by chance I’ll fill you in on something important about me: I love dumplings. Dumplings are life and I love them in all their many forms. I’ve tried many vegetarian dumplings and these are definitely my favourite ones. Tis rich mushrooms with the fresh chives is just such a good combination!

Yep. It’s another cauliflower recipe, I just can’t help myself. And another chickpea recipe. Dressing chickpeas with delicious flavoursome dressings is my current thing. They just soak up flavour so well and are super filling so are great in lighter salads like this.
LENTIL AND FREEKAH SALAD WITH APRICOTS FETA AND RED CABBAGE
This is sort of the third salad I’ve posted this week… whoops! This was clearly not well planned, but it’s all I feel like eating at the moment. This one is super filling due to the lentils and freekah and can easily become a stand alone meal with the addition of some grilled chicken or a soft boiled egg. Perfection.
