Waffle Wednesday is back!!! Mostly because I felt like it was time for another waffle recipe! These are excellent for brunch or you can make them a little smaller and have them as a dessert. They’re gluten free and have a great texture too!
MOCHA CAKE WITH COFFEE CREAM ICING
This is a super impressive looking birthday cake that is way easier to make than it looks!! It’s refined sugar free and gluten free and has a rich sort of mousse cake like texture without being cloyingly sweet. A birthday cake amazing enough for my best friend, and a little bit good for you too! Happy Birthday Anz x.
CINNAMON BRIOCHE BLISS BALLS
These taste like a cross between cinnamon brioche and cinnamon donuts. The coconut, vanilla and cinnamon give them sweetness (enhanced with a little maple syrup, or dates if you’re not a fructard!) and the dark roasted almond butter adds a toasted richness that makes them extra delicious.
NO BAKE SESAME CARAMEL SLICE
With a choc, coconut almond base, tahini caramel middle layer and raw chocolate topping this slice is all the good things. It’s gluten free and sweetened with a little maple syrup to make it a not so naughty treat.
GLUTEN FREE VANILLA AND COCONUT WAFFLES
WAFFLES! I haven’t posted a waffle recipe since last year so thought it was probably about time. These are light and fluffy with a crisp exterior and they’re gluten free and dairy free. You could make them vegan by following the suggestions just before the recipe. And just in time for Easter brunch!

I love choc mint, it’s a child hood favourite of mine. Whether it be in mint choc chip ice cream or a mint slice, or after dinner mints it’s always been a favourite combination of mine.
GLUTEN FREE LAMINGTONS WITH RASPBERRY CHIA JAM AND CACAO ICING
These aren’t your usual lamingtons. The title probably gives that away! They’re gluten free, refined sugar free, made from wholesome ingredients and include a yummy layer of raspberry chia jam in the middle. I’m particularly proud of the chocolate glaze that I think I’ll be using on many baked things to come! Although they are a healthier version they’re also super delicious – for real!
ROASTED ALMOND COOKIE DOUGH BLISS BALLS
I’ve posted a cookie dough bliss ball recipe before. Those one’s were a nut free version and they were yummy but I’ve got to say, roast almonds make these so much better! Both are vegan and refined sugar free.
