This soup. Just, well it’s everything. If you’ve never used tortillas to thicken your soup you’ve got to do it. It’s genius as it makes it creamier without having to use cream! If a soup can be summery and still hot then this is it. It’s perfect for cities like Melbourne when you’re blessed with summer produce but there’s just as much chance of a cold 6 degree day in December as there is a 34 degree one. The toppings are out of control and the main reason for that summer vibe.

These skewers are easy to throw together and make a delicious weeknight meal. They’re also great on the barbecue or at even cold at a picnic! Which seems super appropriate seeing as it’s Cup day and those are two things that hopefully someone is doing today! But anyway, I love the salty unaminess (making up words again) of them against the cool and refreshing salad.

Despite me posting a curry recipe yesterday and complaining about the lack of Spring weather… it’s getting sunny this weekend and that means it’s time to get pumped about salads.

These are so fresh and tasty. The perfect thing for a light summer dinner and super perfect for taking to work. If you do that be prepared to sit at your desk dreaming about lunch for a god period of the morning. The fragrant smell of the salad will get you all excited before you even start on the rolling part.

I’m really into beets and goats cheese at the moment (such as in this tart!), and the mint and beans in this salad mean it’s also fresh and crunchy, making it another delicious summer salad to add to your rotation.
COCONUT AND CHOCOLATE POPS
I love Weiss bars. My favourite ones are the chocolate and coconut ones you can only by in boxes of four at the supermarket. The fact that these only come in fours is never a problem, they’re delicious I want four, it’s that I can never get them when I most want an icey pole, on the way home from beach for example when you stop at the servo or general store. First world problems right? Well this recipe solves none of those problems, it makes 4, isn’t stocked at my local service station and I can’t find it at the beach. However, it is a slightly ‘healthier’ version and I don’t need to leave the house on a 41 degree day to get one.
