Pumpkin Dahl with Tomato and Spinach
This autumnal dahl is both comforting and fresh thanks to the coconut and lime flavours through it. It’s mild in terms of heat level and fragrant with the toasted cumin stirred through at the end. It comes together with very little effort so is a perfect midweek meal and the leftovers can be freezed for lunches.
Vegan Tempeh and Vegetable Ramen
Oh my oh my, another tempeh recipe, if you’d told me two years ago I’d be eating tempeh I would not have believed you. And boy do I get argumentative when I think you’re full of it. it’s not always pleasant for the full of it person… or me when it turns out I was in the wrong. But I’m into tempeh now… well sometimes, when it’s cooked in ways I actually like. And this definitely is one of those ways.
Vegetarian Khoa Soi Style Noodle Soup
This is reminiscent in flavour of a khoa soi soup but like most things I make is lacking in the authentic elements, the flavour is great though, full of thai spices and turmeric!
Sesame, Miso and Ginger One Pot Chicken Ramen
Basically ramen. But I cheated, and made it quick and easy, like almost as easy as 2 minute noodles but full of goodness and yummy nourishing things rather than a weird dehydrated sachet of ‘flavour’. But let’s be honest, I might be trash talking that stuff but I crave it sometimes as it was the comfort food of my childhood and then hangover food of my teenage years and very early twenties. Don’t judge me, just admire how far I’ve come;)
