I love going out for brunch and one of my favourite things on any brunch menu is fritters. Especially corn ones! But so often they are deep fried and more batter than corn. These fritters are quick and easy, full of corn and gluten free. They also make a really easy to prep lunch idea.
BANANA AND SALTED CHOC CHIP MUFFINS
If you’re after a quick and easy gluten free, low fat, low sugar snack then these are for you. They are so so good. Especially straight from the oven. Is there anything better than breaking open a muffin straight from the oven filled with oozing melting chocolate? I think not.
DIPS THAT WILL CHANGE YOUR SNACKING FOR THE BETTER
Eating the recommended intake of vegetables gets a whole lot easier when you’re including them in your snacks. Not a snacker? Then use these dips as part of a delicious lunch spread instead. They are loaded with goodness from vegetables, healthy fats and nuts and are great spread on crackers, rice cakes or sticks of vegetables. Not only that, both are full of flavour.
PEANUT BUTTER AND CHOCOLATE OAT COOKIES
Cookies. Is there a better word to hear when you’re feeling a little snacky? I have quite a few cookie recipes that I rotate but these guys have fast become a new favourite. They just have such a good texture and so much flavour. Soft chewy oats, the crunch of peanuts and melted chocolate… I can’t possibly need to say anything else to convince you to give these a shot!
POTSTICKERS WITH PICKLED CARROTS AND BLACK VINEGAR.
I love dumplings. So so much. They are up there with my most favourite foods ever. Which is probably still a long list as I don’t like playing favourites with food… it’s all so good. I would normally serve these as an entree or nibble for friends or have them for dinner with a pile of steamed broccolini on the side because you know, health. The filling is juicy and flavoursome and the contrast between the crunchy underside of the dumpling and the soft chewy top is what eating is all about. The vinegary carrots add something a bit different to the garnish and some crunch.
KALE, KIWI AND BANANA SMOOTHIE
I think everyone might have their own green smoothie recipe by now… and I’m sure you love your go to but I wanted to share mine. It doesn’t taste grassy or like kale at all but it’s full of it. I also love that vibrant green colour it goes – you just feel like your drinking health haha. And you are, this one has tons of vitamins and minerals, essential fats and fibre. Most importantly this tastes delicious.
SPICED HOT CHOCOLATE
Is there anything better on a cold afternoon than a cup of frothy creamy, chocolatey goodness? Yes. Yes there is. If you add chilli and cinnamon to it. This recipe is uber simple and easy. It can be made with dairy milk or almond milk, but not the dodgy almond milk that’s really watery either make your own or use a good quality rich and creamy version. The hint of chilli makes this extra warming and is just enough to leave some residual heat in your mouth. I promise this is good.
RAW LIME CHEESECAKE
These raw ‘cheesecakes’ are so easy to make and as you store them in the freezer it means you can always have something on hand when those sugar cravings set in. But something a lot lower in sugar than your typical cheesecake or frozen treat! This one is fresh and bright and makes the most of the abundance of citrus that’s around at the moment. The lime and coconut is a classic combination for a reason – it tastes fantastic. Zesty, creamy cheesecake top layer on a base of chewy coconut and almond, so simple, so good.
SWEDE AND KOHLRABI FRITTERS
It’s root vegetable season and I’m getting into it in a serious way. I’m trying different ways of cooking my favourite root vegetables (helllooooo Parsnip Fries) as well as trying some that I wouldn’t normally eat loads of. I’m definitely a lover of fritters and was craving a more wintery version of what I would normally make… and this is what happened. Do you use kohlrabi much? It has a texture that’s not dissimilar to broccoli stem and it tastes a bit like that mixed with a turnip. I’ve found it has more flavour if you cook it with the skin on so that’s what I’ve done here. I’ve added the Swedes because I love their slight sweetness and they give great golden colour and smooth texture to the fritters. Fritters are such a great breakfast or lunch food as they allow you to get lots more veg! Served with a simple side salad and maybe a dipping sauce these make the perfect lunch or breakfast.
PARSNIP FRIES WITH HARISSA DIPPING SAUCE
Is there anything better than fries? That crisp outside and instant dippability (it’s a word, shut up spell check). Actually anything that you can dip into a tasty sauce is pretty fabulous in my book (sweet potato crisps, popcorn cauliflower). These parsnip fries have a lot going from them, parsnips natural ability to caramelise is definitely one of them. The natural sweetness of the parsnip is so good with the spicy harissa sauce.
