I’m feeling indecisive. I knew all the flavours i wanted to eat but I couldn’t decided whether i wanted to have a pretty salmon with sauce and salad thing or if a quinoa bowl was more my vibe. So I made this dish both ways to see what was best. Turns out both are best, depending on level of hunger/patience for plating. This means that you’re getting a double whammy today. 1 recipe, 2 incarnations. Lucky you.

I really had no idea what to call this! But as we were first trying it my housemate said ‘it’s sort of like a saag curry’ so I’m going with that. Thanks Selena! The sauce is super easy to make and full of all the good stuff – greens, herbs, ginger, turmeric and so on. The flavour is a fresh and relatively mild curry that’s perfect with delicate fish.

This week Plan A is going to be gut makeover friendly! Plan B will be vegetarian because I haven’t quite mastered a whole weeks worth of vegetarian options that are gut makeover friendly from my recipes… I’ll get there! This also means that plan A will coincidentally be dairy free, gluten free, sugar free and paleo. And Plan B is where the noodles are at 😉
15 MINUTE PESTO BAKED SALMON
These salmon fillets are super easy and full of flavour. I’ve used a 3 herb pesto as it’s my current favourite but you could use whatever your favourite is. They also go perfectly with that potato salad I posted earlier in the week!
