Spicy and lean chicken burgers make for a super easy any night of the week dinner. Full of protein, extra vegetables in the sauce and omega 3’s from the avocado. You can also serve them with some parsnip fries and a simple salad for a really well rounded meal.
LOTUS ROOT FRITTER WRAPS WITH PERSIMMON SALSA AND AVOCADO
I’ve seen a few pics on Instagram lately of lotus root fritters. I’ve never tried them, but they looked so good and crispy and crunchy so I thought I’d give them a shot. So glad I did, a new favourite lunch was born in these wraps.
MINT, BEETROOT AND GREEN BEAN SALAD
I’m really into beets and goats cheese at the moment (such as in this tart!), and the mint and beans in this salad mean it’s also fresh and crunchy, making it another delicious summer salad to add to your rotation.
VEGGIE BURGER
If you’re after a fun, quick and easy meat free monday idea then this recipe has you covered. I’ve been playing around with veggie patties for a while now and I’m finally really happy with one. This patty has a good ratio of vegetables and legume, and a flavour that doesn’t overwhelm the rest of the burger components, just gets a nice little harmony going on with them. And that’s exactly what I wanted from this burger.
CHICKEN, ASIAGO AND CHILLI CHUTNEY SANDWICH
Sometimes all I want is a toasted sandwich. Comfort food ya know? But comfort food doesn’t need to be a total nutritional loss. This sandwich has all the melted cheese and golden bread of your dreams, but with a home made hot and spicy chutney filled with vitamins A, C and E to name but a few. Add in that handful of greens for freshness and a side salad and you have yourself a meal you can be proud of.
