The tangy dressing, crisp, crunchy cucumber and buttery pine nuts are a winning combination in this salad. It’s a great addition to any meal whether it’s fish, chicken a bbq or a vegetarian spread.
My All Time Favourite Chicken Salad
I cannot with this salad, it’s just so delicious! We’ve been making it weekly throughout isolation as an easy week night meal and now that we’re back at work it’s come in super handy. Chock full of flavour and texture – it’s a delight.
Roast Pumpkin, Walnut and Pearl Cous Cous Salad
This is the perfect winter salad. Full of texture, spice and sweetness. Extra greens thanks to some pan fried kale and mild heat from the Smokey paprika, garlic and lemon dressing.
Smashed Roast Chat Potato Salad
I am oh so into warm crunchy salads at the moment. Tossing roast potatoes with a zesty dressing, tangy goats cheese and fresh vegetables is everything I want to be eating right now. It also has the added benefit of involving me turning the oven on which warms up my chilly kitchen!
Warm Cauliflower, Green Bean and Chickpea Salad
This is the kind of salad I crave in winter – warm, filling and delicious. It’s topped delicious golden croutons and dressed with basil oil. But if you can’t get basil any sort of olive oil base dressing will work perfectly. The point of this salad is for it to be easy to change to suit the contents of your fridge and cupboard.
Easy Chicken, Fennel, Kale and Freekah Salad
You could add anything to this salad and it would be delicious, but that zesty fennel is a must. Actually don’t change a thing, make it like this!
Sweet and Sour Prawn Salad
The weather is warming up and I’m all about it! It means light and punchy salads like this zesty little number.
Roast Potato and Kale Salad with Baked Salmon
I’m always after a heartier salad in the cooler weather, one with warm and filling things yet still full of fresh flavours and this salad really hits the mark.
