I’m all about less cleaning up, so one pot dishes are my jam. This dish has so much flavour, great textures AND it can all be cooked in one pot. You don’t even need any bowls for prep. Just a chopping board, knife, and a dish to bake it all in. The flavours from the chicken make the lentils and barley so tasty and the apricots add just the right amount of sweetness.

A really good sandwich or roll is so satisfying. Yummy flavour combinations between two pieces of bread and you end up so far from the soggy nightmares of your school days. I’ve been known to happily eat a sandwich for dinner (ummm has anybody not done this?). In reality they’re just another version of a burger and that’s dinner food so why not all other sandwiches? Come on, give me one reason?! They’ve got all the parts of a nourishing meal, complex carbohydrate, vegetables, protein. You can even have a side salad if it’ll make you feel like it’s more of a meal.

I love spaghetti and meatballs. I love Asian food. I also love green vegetables. Therefore, this dish is everything to me because it has all those things. Oh and chilli and sesame and they’re always my go to flavours. This is basically my heaven.

These skewers are easy to throw together and make a delicious weeknight meal. They’re also great on the barbecue or at even cold at a picnic! Which seems super appropriate seeing as it’s Cup day and those are two things that hopefully someone is doing today! But anyway, I love the salty unaminess (making up words again) of them against the cool and refreshing salad.
