One day I’m eating like a vegan and the next it’s time for some meat. I basically like to eat everything. I also love that bolognese is such a good vehicle for getting some extra vegetables into a pasta dish. This rendition takes it one step further and uses ribbons of zucchini instead of pasta. Thus, it’s a low carb meal full of vegetables and lean protein – win!

And it’s February! How’s the year going so far? Such an annoying question, because we all love to be reminded of how fast time passes don’t we? This week, for the majority of them, I’ve tried to make the recipes quick and easy to throw together after work. The whole making things easier for people when it comes to cooking healthier food is totally my vibe this year.
ONE POT 15 MINUTE CHICKEN NOODLE SOUP
Just like a cup a noodle soup, but delicious and wholesome and not full of nasty things. This is loaded with flavour and light on the dishes you’ll be eating this one on the reg.

GREEN CHICKEN PESTO SALAD BOWL
I love a salad bowl. Clearly. And at this time of the year a grilled chicken salad is what I feel like eating most of the time. This is also delicious with a boiled egg or some haloumi (seared in a non stick pan) instead of the chicken if you’re into a more vegetarian vibe.
CHICKEN SCHNITZEL WITH PARMESAN SLAW
This might be my favourite dish yet this summer. or at least my favourite chicken dish. I have a lot of favourites when it comes to food. And any way I can have chicken schnitzel in a healthier way is pretty damn exciting for me. This has all my favourite things about schnitzel: golden crispy exterior, succulent juicy chicken and great flavour. It has all these things with out being laden with oil from deep frying – yay.

New year new you right? This year I’m changing it up a little and starting some weekly meal plans for you all. Each week there will be Meal Plan A (Vegetarian) and Meal Plan B (Meat Eater). They will include 5 nights of meal suggestions, photos to get you salivating and links to all the recipes. I’ll also chuck in a breakfast, lunch or snack recipe every now and then because I need variety in my life and I’m sure someone else out there does too!

Summer, you glorious season you. Time for eating in the sun outside, easy salads and colourful lunch bowls. Just like this one. This little bowl is easy to make and is the perfect thing if you’re heading back to work this next week.
CHICKEN AND CORN ENCHILADAS WITH HOME MADE SAUCE
ROASTED TOMATO AND RED PEPPER TORTILLA SOUP WITH GRILLED SWEET CORN AND AVOCADO
This soup. Just, well it’s everything. If you’ve never used tortillas to thicken your soup you’ve got to do it. It’s genius as it makes it creamier without having to use cream! If a soup can be summery and still hot then this is it. It’s perfect for cities like Melbourne when you’re blessed with summer produce but there’s just as much chance of a cold 6 degree day in December as there is a 34 degree one. The toppings are out of control and the main reason for that summer vibe.
