These lightened up burritos can be made as pictured, a smaller wrap, or as a bigger more traditionally sized burrito – depending on how hungry you are. The mini burritos are also ideal for little hands if you’re cooking for kids!

Vegetarian Khoa Soi Style Noodle Soup
This is reminiscent in flavour of a khoa soi soup but like most things I make is lacking in the authentic elements, the flavour is great though, full of thai spices and turmeric!
Zucchini, Avocado and Feta Bruschetta
Food doesn’t need to be complicated, sometimes keeping things fresh and simple is the best. This bruschetta works well as a starter, a lunch, a breakfast or even a dinner. Just add an egg if you want more protein than the feta provides! The flavours are light and fresh with creamy avocado to make it extra filling.

These are a dream. Soft pita, filled with tangy yoghurt, crispy prawns and perfectly seasoned green things. It’s everything I want in a souvlaki. And yep, apparently you can have a souvlaki without meat.
