RED LENTIL PASTA WITH PESTO, SUN DRIED TOMATOES AND PUMPKIN

Red lentil and pesto pasta with pumpkin and sundried tomatoes 3

I have to share this with you because I’m obsessed with red lentil pasta at the moment. It’s super filling, has great flavour and is a dream with this simple sauce. Even if you’re not gluten free it makes a nice change and is an easy way for adding more protein t vegetarian pasta dishes. It’s just an all round win.

VEGETARIAN PAD THAI

Vegetarian Pad Thai 3  How good is Pad Thai? It was my favourite noodle dish for years. Years I tell you, and I get bored oh so easily. The problem is it’s so hit and miss when you order it at take away places. So I now love making it at home, just the way I like it. I’ll put the prawn and chicken version up next, because that’s the other way I like it.

Ultimate Rainbow Buddha Bowl 6This salad bowl is brimming with flavour, texture and colour (obviously!). I love bowl food like this. You can easily leave out anything you don’t like or add other things you have on hand. The important things to tick off are all in the balance of things.

ZUCCHINI WAFFLE BREAKFAST NACHOS

Zucchini Waffle Breakfast Nachos 6

This is a killer breakfast that combines so many of my favourite things. Waffles? Tick. Nacho style layering? Tick. Zucchini fritters? Tick. Plus they’re topped with a herby yoghurt sauce, fried eggs and avocado. It doesn’t get much yummier. These waffle breakfast nachos are a fun way to serve breakfast to a group of people, we don’t eat share food at breakfast often enough, I say.

KUNG PAO MUSHROOM NOODLES

Kung pao mushrooms and noodles6     Guys! Remember kung pao chicken? It’s like a Chinese takeaway favourite, and I’ve usually had it with chicken. But you know I’m always trying to find ways to eat less meat (love it, but I wanna eat the veg for my body’s sake and save the world – realistic goals are my thing), and thus there’s no chicken in this. I replaced it with… mushrooms! And yum! And added noodles cos I love them.

CRISPY COCONUT AND SESAME CAULIFLOWER

CRISPY COCONUT AND SESAME CAULIFLOWER    These are so good! Golden, crispy, crunchy goodness. They’re kind of begging for an ice cold beer, or some other tasty beverage to go along with them but you can also get all virtuous and have them on top of a nourish bowl situation. I like to think of them as one of two things: sustainable coconut prawns or sustainable sesame fried chicken. Sustainable because they’re not either of those two things. Hilarious (don’t hate me).

Go on, ain’t got no time to be subtle.
