We’re speeding through February at a frankly alarming rate and I really don’t want summer to come to an end. I love the warm weather and long nights with beautiful light that come with Summer and I’m definitely not anywhere near ready for that to end. So this week I’m going to keep celebrating the warmth with summer appropriate food.
Pan Fried Barramundi with a Citrus and Avocado Salad
Crispy skinned fish with a citrus salad is such a dream dinner for me This salad is light and fresh and cuts through the richness of the crispy skinned barramundi perfectly.
Green Quinoa Bowl with Crispy Skinned Salmon and Herbed Yoghurt
This quinoa bowl is so good, I’ve eaten it for breakfast, lunch and dinner – just not in the same day cos that’d probably be a little excessive. The yoghurt sauce with the vegetable studded quinoa, creamy avocado and crispy skinned salmon is such a great combination. The key to this dish is seasoning with lemon, it means you can use less salt and still bring out the flavour of the food.
Vegetarian Khoa Soi Style Noodle Soup
This is reminiscent in flavour of a khoa soi soup but like most things I make is lacking in the authentic elements, the flavour is great though, full of thai spices and turmeric!
Crispy Prawn Souvlaki with Dill Yoghurt Sauce
These are a dream. Soft pita, filled with tangy yoghurt, crispy prawns and perfectly seasoned green things. It’s everything I want in a souvlaki. And yep, apparently you can have a souvlaki without meat.

The long weekend has been full of relaxing beach times for me and not thinking about food prep… but it’s that time again and the best way to get my week on track is planning it a little in advance. For me that usually means planning what recipes I’m testing and writing these meal plans based for you!

Ummm so we’re already halfway through january and that’s a little crazy. I’ve already got my first illness for the year which is just fabulous. Actually, it’s not even that bad and my body seems to be doing it’s thing and fighting in just fine as long as I keep fueling it with the good stuff. So get ready for the good stuff, lots of vibrant colours as healthy fats this week!
Potato, Pea and Radish Salad with a Mustard Dressing
The flavours and textures in this potato salad make it such a winner and the perfect thing to bring to a picnic or have as a side with any summer dinner. That salmon recipe from yesterday would be great with this! As there’s no mayo it’s fresh and light and the crisp radishes and sweet peas really get to shine through.

It’s the time of the year for easy wraps and portable food like these delicious pita pockets. They’re quick to make, and super tasty. Plus they’re full of vegetables to help you up your intake in case that’s one of your new years resolutions!
