When I say chicken stir fry I mean chicken and vegetable. And probably mostly vegetable. Because I really do see stir fry as a chance to eat as many delicious vegetables as possible. Using curry paste as the base of a sauce for a stir fry is so fantastic as it gets rid of so much of the prep time and delivers big on flavour!
CHICKEN AND CABBAGE FRAGRANT FRIED RICE
This is a super adaptable recipe, it’s one of my favourite fridge clean out meals and you really can use the basic ‘technique’ and simple flavours to make fried rice out of whatever you have leftover. It’s really simple comfort food at its best! This combination is so tasty though, especially with build your own toppings I like to serve on the side.
BAKED CHICKEN KIEV WITH HOME MADE WEDGES
Hey there 80’s classic I’m coming at you with both my wardrobe and my food right now. In terms of wardrobe there’s this pair of vintage jeans I own which are a stone grey with an elasticised waste, they’re sort of baggy and sit up high and I roll them up and sometimes wear them with platforms, a black silky cami and probably not a bra. They’re fantastic. Pretty much all men hate them, but I love them and that’s the part that matters. I also love Chicken Kiev and I’m bringing it back. Even if it’s only at my own table.

I even did your planning in advance so this little collection is ready to go today. I decided this holiday is all about me turning my brain off so most of these posts are written in advance. MIDDLE EASTERN CHICKEN AND BARLEY SALAD

DUMPLINGS!!! Give me all the dumplings, always! If somebody wants to do a causal dinner, I’m always like “should we get dumplings?” because I want them always and will take any excuse to go out for them. That said I also love making my ow and these are all kinds of perfect. A delicate filling, delicious spicy broth and greens – this is a health food blog after all.
LEMON, PARSLEY AND CUMIN BARBECUED CHICKEN
Often people don’t thinking of cooking chicken whole on the barbecue when they think of barbecue. And I don’t mean rotisserie style I mean right on the grill. It’s by far one of my favourite things to barbecue as it gives it so much flavour and such crispy skin. Cooking on the bone also helps prevent some of the dryness that you can get with grilled chicken.

We’re getting a little trashy today! Buffalo chicken for the win. I love love love spicy things and buffalo chicken wings are the bomb. But they’re also not great for you… So I’ve tried to lighten things up a little here with a baked, not fried version of them. And they’re not wings, because I figured they weren’t going to be easy to eat in a salad bowl and this is essentially a ridiculous chicken salad.
