At this time of year I’m obsessed with eating salads. They’re quick and easy and exactly what I feel like eating on a warm summer’s day. The following are my current favourites.
Peanut Curry Noodles with Ginger and Chicken Meatballs
The peanut curry soup base pairs so delightfully with the light and fragrant meatballs. You can even make the meatballs in advance for a quick week night meal. this isn’t a big bowl of soup, the soup base creates a sauce that the noodles poke out of and coats everything in deliciousness.
Lemon and Thyme Skillet Roasted Chicken
This is such a great way to roast chicken on a week night. By starting it in a hot skillet you’re guaranteeing crispy golden skin and juicy chicken. You can prep it the night before if you remember!
Chicken, Zucchini and Fennel Meatballs
I’m obsessed with these meatballs, they’re perfect to add to any salad bowl, stuff into pita, have with mash – eat them your way. You can freeze any extras you have or make a double batch and freeze them raw. That way you always have a healthy protein option on hand.
My All Time Favourite Chicken Salad
I cannot with this salad, it’s just so delicious! We’ve been making it weekly throughout isolation as an easy week night meal and now that we’re back at work it’s come in super handy. Chock full of flavour and texture – it’s a delight.
Crispy Chicken Ribs – Baked not fried!
These are so good that my partner and I prefer them to the deep fried version. Using skinless chicken ribs makes them a lighter choice than your typical fried chicken wing. And you don’t miss out on any flavour.

This recipe is all time. I am so proud of it as it’s super delicious and fun. I wouldn’t usually post two meat based recipes in a row as it’s not reflective of how I eat but I just couldn’t wait to share this. I’ve included ideas below to make it vegetarian, you could even make it vegan if you used vegan cheese alternatives. No matter what, it’s delicious.
