61 Things to do with your Christmas Leftovers

With all the changed plans and the usual over catering you probably have a bit of leftover food this Christmas? Here’s what to do with it…

Note: This sort of thing is totally my jam. Send me the contents of your fridge and I’ll come back at you with meal suggestions. It’s like playing ready steady cook. I’ve separated the ideas into the following sections: Ham, Turkey, Seafood, Roast Pork, vegetables, Dessert and Cheese. Have something else leftover and don’t know what to do? Tell me!

Ham

1. Bacon and Broad Bean Fried Rice, just dice the ham and use it instead of bacon.

2. Add it to this cauliflower carbonara. Instead of the bacon of course!

3. Make a BLAT with ham instead

4. Egg tarts: line baking trays with pastry and sprinkle in chopped ham and chives. Add an egg and more chopped ham and chives.

5. Or this BLAT Potato Salad.

6. Why not a ham, mustard and cheese toast or? It’s a classic for a reason.

7. Add it to a crispy rice bowl.

8. Serve pan fried with potato waffles for a ridiculously good breakfast.

9. Or make a quick hash using any finely chopped leftover vegetables and ham.

10. Chilli and Ham Scrambled Eggs, dice the ham, heat in a pan and pour over whisked eggs spiked with chives, chilli oil and Parmesan. Move around pan until cooked.

11. Add chopped ham to these corn fritters.

Turkey

12. Replace the chicken with Turkey in these delicious zucchini and chicken enchiladas

13. Chuck some shredded Turkey in a quick kale and freekah salad

14. Mix chopped roast Turkey with Mayo, mustard, chopped celery, pickles, spring onion and walnuts and use it to fill soft white rolls.

15. Use shredded Turkey in this salad to top hummus and swipe through flatbread.

16. Or in this Healthy-ish Chicken Nachos Recipe.

17. Wrap it up in rice paper rolls.

18. If it gets Cold use chicken stock and shredded Turkey to make this orecchiette and lemon soup. 

19. Add to a simple pie, make a white sauce using a roux, stock and milk and add shredded Turkey and chopped leftover vegetables. Do a pot pie by just topping a casserole dish of this with puff pastry.

20. Love putting shredded Turkey in fried rice too.

21. Or use it my All Time Favourite Chicken Salad.

22. A pasta bake is always a good way to use up leftovers.

 

Seafood

23. Flake leftover fish into these delicious potato cakes. Salmon or Ocean Trout are ideal.

24. Leftover cooked salmon can be served with this quinoa salad

25. Add leftover cold cooked prawns to this summery salad.

26. Did you have whole snapper? Use the leftovers in this orecchiette.

27. Or use left over cooked salmon or Ocean trout in this Israeli Cous Cous and fennel salad.

28. Make tandoori salmon burgers.

29. You can use cooked or smoked fish in this radicchio salad.

30. Prawn Black Rice Poke Bowls are great with leftover cold cooked prawns.

31. Or in this Prawn, Mango, Avocado and Noodle Salad.

32. This easy smoked salmon and egg pasta can be made with cooked salmon too.

33. Same with this Hot Smoked Salmon and Pink Grapefruit Salad.

Roast Pork

34. Make mini or full sized bahn mi, make sure you use the crackling too.

35. Or use pesto, caponata, any leftover antipasto board stuff and add to a roll with leftover roast pork.

Vegetables

36. Have leftover cold roast potatoes? This roast potato salad is your jam.You can reheat the potatoes in a pan.

37. Or this one you can serve with fish!

38. Leftover boiled potatoes? Hello potato salad!

39. Leftover roast sweet potatoes are also great in salads like this one

40. Or mash boiled potatoes into these broccoli, goats cheese and potato cakes.

41. This broccoli and avocado loaded potato salad is also delicious. It potentially uses a number of leftovers from Christmas day!

42. We always have peas at Christmas. Throw the leftovers through this spring risotto.

43. Or this zucchini, pea and pine nut salad.

44. This creamy herb and pea pasta is a great way to use leftover herbs too.

45. Didn’t use all the root vegetables you purchased? Root vegetable fritters to the rescue.

46. Or make this version of Huevos Rotos.

47. Any leftover roast vegetables are great in simple Buddha bowls like this one.

Dessert

48. First up just eat them!

49. But seriously, you could make a kickasss Sundae with any dessert leftovers, just layer with ice cream.

50. You could also mix cake or cookies through softened ice cream and then refreeze. Great for Christmas Pudding too.

51. Lots of leftover berries? It’s time for a berry skillet crumble.

53. Strawberry, lemon and basil friands are a great way to use up excess strawberries.

54. Blueberry bread and butter pudding is an excellent way to use up leftover blueberries and bread.

55. Berry and Thyme Skillet Sponge Pudding, this is just delicious.

56. Freeze leftover fruit and blitz into smoothies.

57. You can blitz leftover yoghurt with fruit and freeze as icey poles.

Cheese Please
