It’s that time of the year! We’re firmly in December so the festivities are beginning. We’re super lucky to be able to celebrate with friends and family this year and I’ve got multiple celebrations in the works. Starting this weekend, so I thought it was time for a Christmas menu!
I’ve gone with a pescatarian friendly feast as have existing delicious ideas for the meat eaters in your life with this menu and this one.
I’ve included 3 options for starters, mains and desserts, plus 6 sides. I am by no means suggesting you’d make all of these! You just pick your favourites 😉
Starter
Beetroot Cured Ocean Trout with Pickled Fennel and Zucchini this looks beautiful and can be made in advance.
Prawn Tostadas, perfect for a casual feast.
Indian Spiced Fried Cauliflower Lettuce Cups
Mains
Roasted Snapper and Fennel with Chilli, Lemon and a Cashew Tartar. This looks so impressive on the table.
Pan Fried Barramundi with a Citrus and Avocado Salad, so pretty!
Herb Crusted Salmon, you could use the salad in this recipe rather than one of the side suggestions below.
Sides
Golden Roast Potatoes with Lemon, Feta and Oregano. The best roast potatoes.
Lemony Brown Butter Green Beans
Grilled Apricot, Thyme, Leek and Goats Cheese Salad. A celebration of summer stone fruit!
Crunchy, Salty, Sweet Addictively Good Pumpkin and Kale Salad. This salad is full of texture and flavour
Dessert
Chocolate and Cherry Trifle. The dessert I’ll be bringing to a pot luck. For sure.
Meringue Wreath with Strawberry cream, You can’t go wrong.
5 Ingredient Choc Coconut ‘Bounty’ Balls. The perfect thing if you’re more interested in a cocktail for dessert!
