It’s another long weekend in Melbourne and I’m excited about it because it means my birthday falls on a public holiday! The weather is glorious and we have enough freedom of movement now that I can to celebrate it with family and friends.

Before I get to that part of my weekend, here’s some delicious idea for the week ahead…

Breakfast

Choc-Coconut Chia Pudding, this is a delicious make ahead breakfast, super easy.

Easy Summer Baked Eggs, it’s not quite summer yet but it really feels like it.

Lunch

Zucchini, Pea and Pine nut Quinoa Salad, I love this and it’s perfect to take to a picnic.

Vegemite Ramen Noodles with Ginger and Sesame, quick and easy.

Dinner

Pasta with Slow Roasted Tomatoes and Garlicky Basil Oil. So delightful.

Almond Crumbed King George Whiting, this with salad is my perfect warm evening meal.

Sticky Ginger Chicken Mini Bahn Mi, the ideal picnic dinner!

Satay Noodle Bowls with Salt and Pepper Tofu, one of my favourite ways to eat tofu.
