I’m going back to face to face teaching this week and it’s a weird feeling! I’m so excited for my students but I’m also aware it’s going to be an adjustment for all of us. Really glad we’ve waited until cases are this low to do it so the students and teachers don’t feel like they’re being put at risk, fingers crossed everything works out. I’m super excited to have a destination to walk to this week ha!
This also means that I’m back to having work lunches, for me that often means leftovers or one of my go to legume salads that I’ve included below. Enjoy!
Breakfast

Easy lentil Salad, a work lunch winner.
Summer Chickpea Salad with Feta, you can make this in less than 15 minutes so it’s my go to when I’ve forgotten to organise anything.
Dinner
Creamy Tomato, Spinach and Zucchini Dahl, I’m obsessed with this recipe that’s on my Patreon, and my freezer is stocked with it.
Chicken and Mushroom Larb Style Lettuce Cups, an easy and delicious dinner.
Quick Broccoli, Lemon and Almond Pasta for when you’re too tired to cook but don’t want take away.
Sweet and Sour Prawn Salad, this is perfect for the warmer weather.
