This week has been interesting. I’ve had days where I just… couldn’t. Didn’t feel like being productive or achieving anything. And that’s fine because other days are great! I feel it’s so important to give myself time and space to feel what I’m feeling in this ongoing lockdown. And today I feel like sharing a meal plan with you!
The weather is warming up and it’s totally helping my mood. It’s also Father’s Day today and 3 beautiful friends have had birthdays this week. Not seeing them sucks but finding things to send them that will make their day in lockdown a little brighter is cool in its own way.
Breakfast
Rainbow Breakfast Pizza – have a little fun with your food.
Broccoli, Goats Cheese and Potato Cakes, these are a great way to use up odds and ends in the fridge, you could sub kale or spinach for the broccoli.
Lunch
Satay Noodle Bowls with Crispy Salt and Pepper Tofu, I love these vegan bowls – so much flavour and texture.
Lentil and Haloumi Salad Bowls, a bowl of vibrant greens, crispy Haloumi and filling lentils.
Dinner
Mussels with a Thai Coconut Broth and Spring Vegetables, it’s spring people! And that’s something to celebrate.
Spring Risotto with Asparagus, Peas and Chicken because I’m super into this Spring thing.
Buffalo Chicken and Ranch Slaw Salad, I love the spicy sauce on this chicken.
Parmesan Crumbed Zucchini Tacos, I love the textures in these tacos.
Bonus: Matcha and Coconut Mousse – so easy and delicious!
