Meal Plans 14

One day late on the meal plans thanks to a weekend spent blissfully away from social media! But they’re here and filled with delicious options to inspire you.

We went back to being able to see a few friends and family in Melbourne and it was so lovely to be a little more social’, but I sort of found it exhausting too?? Like me body and mind has adjusted to the slower pace of things and fitting anything new in, no matter how wonderful, is so exhausting. Anybody else feeling this or am I just maxing out on my introvert tendencies?

The sun has also been coming out to shine but not really changing the ambient air temperature. Woke up to ‘feels like’ 1 degree celsius this morning which is just peachy. Warming food is definitely going to be filling my belly. Soup and dahl is on my agenda, easy and comforting things that are full of vegetables. Perfection!

Breakfast

Blueberry and Oat Spiced Breakfast Muffin, these will make your house smell delicious and you can warm them briefly just before eating YUM.

Vegan French Toast, the perfect way to use up any leftover bread you’ve been baking (or if you’re like me you’re lucky enough to have someone baking it for you).

Lunch

Simple Red Lentil Dahl this one is a winner and excellent to have in your freezer for cbf cooking emergencies.

Hummus with Slow Roasted Tomato and Pomegranate Salad, this with flat bread is the perfect light lunch.

Dinner

Chicken, Leek and Sundried Tomato Pasta Bake this is comforting, delicious and super easy.

Creamy Vegan Mushroom and Thyme Soup, this soup is full of protein and fibre so will keep you full for longer.

Chicken, Prawn and Cabbage Dumplings in Chilli Broth, this is a like a hug in a bowl. A spicy, flavoursome hug.

Indian Spiced Cauliflower Tacos can be made with little roti bread or flour tortillas and are a yummy burst of flavour. keep them vegan by using coconut yoghurt.

Sweet Treat

This Triple Chocolate and Coconut Slice is incredible!
