Cherry Tomato, Butternut Pumpkin and Cauliflower Pasta Bake
This easy to make pasta bake is flavoured with roasted garlic, thyme and sage too but you could easily swap the herbs out for what you have on hand. In these times subbing ingredients is something it’s helpful to get confident with. With that in mind, most of this post is about what else you can sub for the listed ingredients. Please feel free to comment with any questions:) I usually use a mixture of cheeses in this too, just the ends of what’s on hand. You want a mixture of sharp and bitey and melty but if a mixture isn’t possible a sharp cheddar will work too.

I totally wanted to have more new recipes for you this week but with emergency meetings at school and my decision to work extra days there I had no time! But as most other people I know a socially isolating and working from home I though I’d throw in some recipes with minimal ingredients and things that can be frozen. As well as something that’ll require more time if you’re up for the challenge!

The world has gone a little crazy since my last blog post and our lives are all being impacted the pandemic. Almost everyone I know, knows someone (or has experienced one of the following themselves) that has either been forced to self isolate post holiday, made redundant, had to cancel a wedding or other celebration or had all their work cancelled. These things have all happened to my nearest and dearest. Perhaps you’r simply getting prepared for a 2 week potential isolation if something happens in your network? With all this going on, I thought a little reminder of yummy things you can batch cook was in order.
Dark Chocolate Mousse with Passionfruit Cream (Vegan)
Easter is so close now and the shops are filled with chocolate and hot cross buns… and I’m way more interested in the chocolate! I often make chocolate mousse for events and have been trying to come up with a dairy and egg free version and I’ve finally nailed it! And there’s no avocado in sight.

I’ve spent the last week getting over a sinus infection and having a long weekend to get better gas been fabulous… if a little boring! But I’ve also discovered two fabulous series: Cheer (Netflix) and The Outsider (Foxtel) so I’ve managed to stay entertained!

This is a bit of a trash recipe title isn’t it? Vegemite on noodles is as basic as it gets but I’ve fancied it up for you and made it extra delicious. This is the food I crave when I’m feeling a bit under the weather, and my current sinus infection situation has me cooking like a basic bitch.

I had another little hiatus while I got busy with work and fun times (a dear friend’s hen’s weekend last weekend!). But I’m back! I realised when I’m busy it feels way harder to stick to the vegan until 6 thing, as I have less time to get organised so this week I’m focusing on things that I’ve been eating for breakfast and lunch that we’re just EASY.
