What a week! I’ve started house hunting, my boyfriend is back in Melbourne after 7 months of long distance, and I’m back at all my different jobs – phew!
I’ve also loved being back in the kitchen and this week’s meal plans reflect what we’ve been eating this week.
Plan A
Day 1: Broccoli, Chilli And Cheddar Grilled Cheese, this is the best toastie ever!
Day 2: One Pot 15 Minute Chicken Noodle Soup, easy and delicious.
Day 3: Gnocchi in a Rich Eggplant, Tomato and Basil Sauce, this delicious sauce is also a good sub for meat sauce in a vegetarian lasagne.
Day 4: Prawn and Pumpkin Yellow Curry, make you’re own curry paste for this curry and have it on the table in 45 minutes.
Day 5: Roast Pork Rack with Cauliflower and Fennel this is the perfect Sunday roast.
Plan B
Day 1: Gnocchi in a Rich Eggplant, Tomato and Basil Sauce, the best pasta sauce ever.
Day 2: Creamy Vegan Mushroom and Thyme Soup, this Soup is thickened with protein rich beans to make it really filling.
Day 3: Broccoli, Chilli And Cheddar Grilled Cheese, sometimes a sandwich is all you need.
Day 4: Pumpkin and Goats Cheese Tacos, a very yummy taco filling!
Day 5: Crispy Satay Tofu with Coconut Rice, my first ever tofu recipe and still one of the best.
And this week’s bonus? Gluten free banana bread.
