I’m currently on a train to Paris, apparently writing blog posts on trains is my new favourite transit activity. Lucky you!
The last 2 weeks in Provence have been full of beautiful towns, amazing food and lovely company. I’m sad to leave but oh so happy the holidays isn’t over yet… although with temperatures soaring in Tuscany for the next week (the next stop) I’m sure my diet of gelato will not be improving.
So I’ll live vicariously through you with the following nourishing dinner ideas:
Plan A
Day 1: Garam Masala Baked Eggs with Chickpeas and Spinach, breakfast for dinner is always a great week day vibe.
Day 2: Lamb, Eggplant and Almond Curry – super easy and very satisfying.
Day 3: One Pot 15 Minutes Chicken Noodle Soup, everyone needs a chicken noodle soup in winter.
Day 4: Crispy Tofu and Broccolini in a miso Broth, this tastes both indulgent and clean and simple all at once.
Day 5: Polenta, Manchego and JalapeƱo stuffed Squid, served in a chipotle and tomato sauce this squid is comfort food that will warm you from the inside out.
Plan B:
Day 1: Vegetarian Pad Thai, a simple version of everyone’s favourite noodles.
Day 2: Sweet Potato, Peanut and Red lentil Curry, this curry was a happy accident that’s become a number on regular rotation.
Day 3: Crispy Tofu and Broccolini in a miso Broth, I can’t wait to make this when I get home.
Day 4: Roasted Za’atar Pumpkin with Blue Cheese Ranch Dressing – simple and delicious.
Day 5: Vegetarian Lasagne with a Cauliflower Bechamel this takes time but with a vegetable laden bechamel and some of the pasta layers being replaced with vegetables it so full of goodness.
Bonus: Gluten free triple chocolate brownie as it’s a delight!
