Meal Plans Week 116

I have been a little light on the recipe posts this week – in major holiday prep mode and it’s a serious distraction to the usual schedule. But I also have been testing a whole lot of delicious new recipes for the blog for the next few weeks that I’m super excited about.

That doesn’t mean I’m going to forget about Meal Plans though, there’s some yummy things in store and lots of easy options as that seems to be my constant vibe these days.

Plan A

Day 1: Brussel Sprout, Thyme and Crispy Skinned Duck Breast Risotto. This is such an amazing combination of flavours, if you’re not into duck you could use chicken.

Day 2: Sweet Potato Chips with Roasted Garlic Guacamole, the ultimate lazy meal.

Day 3: Winter Salmon Nicoise Salad, this warm take on a classic is perfect for winter weather.

Day 4: Thai Red Curry Noodle Soup, the spice in this soup will help warm you up.

Day 5: Rosemary Roasted Cauliflower with Butter Bean and Parmesan, the kind of vegetarian food that will leave you satisfied and your soul warm.

Plan B

Day 1: Easy Lentil Salad, this no fuss salad tastes delicious and is perfect for a quick supper or your lunches for the week.

Day 2: Red Curry Pumpkin Soup, Soup needs to be a regular thing in everyone’s life at the moment and this recipe is a winner.

Day 3: Rosemary Roasted Cauliflower with Butter Bean and Parmesan Puree, serve this with some flat bread to scoop everything up with.

Day 4: Vegetarian Makhani Curry, simple, delicious and warming -also reheats well for lunches.

Day 5: Sweet Potato Chips With Roasted Garlic Guacamole, apparently eating guac isn’t a meal but I’d like to disagree.

This week’s bonus recipe is Blueberry and Oat Spiced Breakfast Muffins because they’re a yum snack or breakfast on the go.
