Apparently it’s snow season now? What a cold snap it’s been and the kind of weather that’s had me being the opposite of sociable. This week I’ve watched the Mrs Wilson miniseries and most of Chernobyl so have clearly been being a social butterfly… hmmm.
That said both were excellent televison and maybe just surrounding my self with British accents is my way of getting excited about the trip I’ll be going on in a couple of weeks. This time I’m off to London, France and Italy with a little stop over in Singapore on the way to really up the food inspiration.
I’m heading to the south of France, Paris and Tuscany so please let me know if you have any must eat destinations!
In the mean time, I’m going to continue to cocoon myself and really lean into winter with meals like this…
Plan A
Day 1: Eggplant and Potato Curry, I love making curries at the start of the week and eating the leftovers for lunches. Or just make this for your lunches only, it freezes well too:)
Day 2: Bok Choy and Pork Soba Noodle Bowl – super quick and easy to make so perfect for a week night.
Day 3: Roasted Red Pepper and Tomato Tortilla Soup, you can add shredded chicken to this and use any leftover tortillas for tacos tomorrow night!
Day 4: Pumpkin and Goats Cheese Tacos, tis the season to eat all the pumpkin and it’s always a good time to eat tacos.
Day 5: Chicken, Prawn and Cabbage dumplings in a chilli broth. These will warm your soul and your tummy.
Plan B
Day 1: Pumpkin and Goats Cheese Tacos, a quick option for the start of the week, double the recipe and have some for lunches.
Day 2: Skillet Lasagne with Ricotta and Greens, the cheats version of a Lasagne.
Day 3: Eggplant and Potato Curry, this rich sauce is full of flavour.
Day 4: Roasted Red Pepper and Tomato Tortilla Soup, you can leave out the chicken and it’s a great way to use any leftover tortillas!
Day 5: Broccoli, Goats Cheese and Potato Cakes, and this one will use up the goats cheese you got for the tacos.
