This week I’ve got loads of yummy things for you! Still trying to keep some cross over flavours to cut down on waste. Plus there’s soups, pasta and a super easy flatbread in the mix for you.
It’s time to really get into delicious winter vegetables too and this week I’m of course having cauliflower because when do I not?! Not even sorry…
Plan A
Day 1: Cauliflower Flatbread with Balsamic Glaze, super easy and loads of flavour.
Day 2: Salmon Salad with Roasted Potatoes and Kale, the mustard and herb coating on the baked salmon is so yummy.
Day 3: Sesame Chicken Ramen, another ridiculously easy dish you can make in one pot.
Day 4: Vegetable and Chickpea Soup with herb Pesto, this pesto is an amazing way to use up leftover herbs.
Day 5: Easy Baked Meatballs with Spaghetti, serve with steamed greens or a simple green salad.
Plan B
Day 1: Satay Noodles and Crispy Tofu Bowls, the salt and pepper spice on the tofu is so yummy.
Day 2: Vegetable and Chickpea Soup with herb Pesto, the pesto adds a whole lot of flavour.
Day 3: Gnocchi with an Eggplant, Tomato and Basil Sauce. One of my favourites!
Day 4: Brussel Sprouts on Almond Gremolata, serve with some flatbread or sourdough toast.
Day 5: Cauliflower Flatbread with Balsamic Glaze, serve with a green salad for an easy dinner.
Bonus recipe: Blueberry bread and butter pudding, such a yummy winter dessert!
