After a holiday week hiatus from providing you with meal plans they’re back! I have so many yummy ideas to share with you from something special for a weekend feast to easy quick midweek meals. I got you.
It feels like Autumn has really set in in my part of the world this week and I’ve embraced it with Autumn veg and belly warming meals.I’ve also been trialing a few new baking recipes, but nothing I’m happy enough to share yet! Sometime soon I’m sure!
For now… let’s get you excited about food for the week!
Plan A
Day 1: Broccoli, Goats Cheese and Potato Cakes these are so tasty and you can freeze any leftovers!
Day 2: Cauliflower and Thyme Carbonara, this is a light carbonara with no cream and the addition or crispy cauliflower to up your veg intake.
Day 3: Salmon and Mushroom Ramen with a Ponzu Broth, my favourite salmon bowl and we’re now in the weather for it.
Day 4: Pumpkin, Sundried Tomato and Kale Risotto this is such a delicious risotto, full of vegetables and flavour!
Day 5: Slow Cooked Pomegranate Lamb, for the ultimate weekend feast!
Plan B
Day 1: Pumpkin, Sundried Tomato and Kale Risotto have any leftovers for lunch or make into arancini!
Day 2: Garam Masala Sweet Potato and Carrot Soup, a gently spiced and aromatic soup.
Day 3: Mushroom and Spinach Fettucine with Walnuts and lemon, I love a mushroom pasta so so much.
Day 4: Broccoli, Goats Cheese and Potato Cakes, these are just as great as a light supper as they are for a weekend breakfast.
Day 5: Indian Spiced Cauliflower Tacos, cauliflower is getting cheap again YAYYYY
This week’s bonus: I think it’s time for this mini banana and macadamia upside down cake again.
