Meal Plans Week 110

I have been a little quiet again this week! My boyfriend is visiting (he’s currently living overseas this the visiting aspect) and we’ve been in Sydney this weekend and generally just keeping ourselves busy so I’ve been a little less focused on writing up recipes… I’d rather only share the best with you than rush it!

But I do have some ideas for the week ahead…

Plan A

Day 1: Quick and Easy Vegetarian Chilli, this is perfect for work lunches too do make a big batch st the start of the week!

Day 2: Rosemary Chicken, Sweet Potato and Pomegranate Salad with Blue Cheese. A deliciously filling salad full of Autumn flavours.

Day 3: Satay Noodle bowls with crispy salt and pepper Tofu. This bowl is so full of flavour and just as yummy cold as it is hot from the pan!

Day 4: Fragrant Coconut Poached Salmon with Red Lentils, such a comforting yet light bowl of food.

Day 5: Crispy Chicken Burgers with Parmesan Slaw and Spicy Mayo. The perfect Friday night meal.

Plan B

Day 1: Pumpkin and Spinach Skillet Lasagne with Basil Vinaigrette. I love these free form versions of ‘lasagne’ as they’re quick and delicious.

Day 2: Satay Noodle bowls with crispy salt and pepper Tofu. The cabbage in this is actually such a highlight!

Day 3: Quick and Easy Vegetarian Chilli, this is the perfect quick warm you up meal!

Day 4: Cauliflower soup with Parmesan and Quinoa Crisps, my favourite soup and cauliflower are just starting to get cheaper so I believe it is time!

Day 5: It’s taco time, why not go breakfast for dinner with these yummy paprika spiced potato breakfast tacos!

This week’s bonus? Embrace Easter with these fluffy Hot Cross Bun Pikelets! SOOO GOOD
