Banana, Peanut Butter and Jam ‘Parfait’

This is a next level breakfast or excellent dessert. Made using all natural whole foods and with no added sugar (excluding anything you choose to use to sweeten your granola), it’s a great substitute for ice cream!

I love whipping up frozen bananas and eating them like soft serve. you can top with your favourite sundae toppings and it is the most delicious treat. Peanut butter and jam is a classic combination for a reason and peanut butter, jam and banana is next level delicious.

I make the jam from frozen berries and chia seeds. The chia seeds swell and thicken the berries causing it to set like a jam without adding any sugar. I’ve used raspberries but you could use your favourite and it will still work. It makes more Jam than you’ll need but you can use it to top toast or on yoghurt too.

You can substitute peanut butter for almond butter but I’d definitely use the dark roasted kind if you can get. It’s just soooo much better! I’m probably addicted to it and need to chill out a little on my peanut butter in take.

This recipe is super easy to whip up and you could use a store bought granola (try for one without sugar added, and no dried fruit as there’s loads of fruit already in this recipe and it just needlessly ups the sugar content. I have a recipe for nut free toasted muesli here and my favourite toasted muesli is here. Both work really well!

Serves 2

Ingredients

1 cup frozen raspberries

1 Tbs chia seeds

2 large bananas, roughly chopped and frozen

1 Tbs milk of choice

1 tsp vanilla extract

1/4 tsp cinnamon

1/2 cup toasted muesli of choice.

1.5 Tbs peanut butter

Directions

Place the raspberries in a small pot on the stove and heat over a low heat until juicy and defrosted. Stir in the chia seeds and simmer for 5 minutes until thick. Set aside to cool.

Meanwhile, place the frozen banana in a high speed blender or food processor and add the milk, vanilla and cinnamon. Blend until smooth and the consistency of soft serve.

To serve, place a spoonful of jam in the bottom of your serving glass, top with some banana soft serve, follow with 2/3 the muesli, another dollop of jam and then the remaining soft serve. finish with another dollop of jam, the peanut butter and the remaining muesli. Dig in.
