This week’s meal plans are being written from London but are still going to be oh so summer focused as suddenly changing seasons on you all just because I have seems a little weird…
This week we have more salads (I am who I am), delicious curries and some burgers because what’s summer without a burger in your hand?
I’m in London for just under two weeks so if you have some incredible tips for me please throw them my way! Today my plan is to write this post for you all then go explore Victoria Park. I’ve just had the biggest sleep in after a full 24 hours of travel that started at 4am on the travel day so I’m feeling a little space cadet like. Nothing a coffee and something delicious to eat can’t fix.
Plan A
Day 1: Extra Green Saag Paneer Curry, start the week off on a vegetarian note!
Day 2: Saffron, Leek and Scallop Risotto makes for the loveliest flavour combination.
Day 3: Zucchini, Pea and Pine nut Quinoa Salad, this salad is the perfect vegetarian meal as the quinoa and nuts make it really filling.
Day 4: Buffalo Chicken and Ranch Slaw Salad, this is a far lighter take on buffalo chicken but still with all the lip smacking flavour of the real deal.
Day 5: Sourdough Crumbed Fish Burger, my favourite burger on the blog. Especially when it’s made with King George Whiting.
Plan B
Day 1: Zucchini, Pea and Pine nut Quinoa Salad, makes enough for lunches too.
Day 2: Spicy Cassarecce with Vodka, Basil and Parmesan , the ideal pasta sauce with a kick to it.
Day 3: Extra Green Saag Paneer Curry, get all your greens in.
Day 4: Quinoa Bibimbap bowl, this bowl has a few different components to make but it sings with flavour.
Day 5: Veggie Burger, this legume and veggie filled pattie is the perfect burger filling.
This week’s bonus recipe has to make the most of the summer berries: Strawberry, Lemon and Basil Friands. Not the healthiest treat in the world but they’ll make your heart sing and what’s healthier than that?
