This mayo is life. It is the best mayonnaise I’ve ever made. You’ll want to dip everything in it and it makes this simple and easy salad sing.
This salad is gluten, grain and dairy free so suits all sorts of dietary needs. It’s also full of crunchy texture and punchy flavour to leave you feeling really satisfied.
But the key to everything is the mayonnaise. It’s also amazing as a dipping sauce for veggie sticks or seafood or even on your favourite kind of burger. I’m actually excited about all the different ways I’ll be eating it. I am a dork.
Using cashews to add body and creaminess means you don’t need eggs or dairy so it’s also vegan… not that this salad is but you could sub the chicken for tofu and make it so. The recipe makes more mayo than you’ll need because that way you can put on all your other meals too.
You need to soak the cashews the night bef re hand or at least an hour before)
Serves 2
Ingredients
Salad
1 chicken breast, sliced into bite sized pieces.
1 Tbs fresh oregano
1 tsp lemon zest
1 small clove of garlic, crushed
2 tsp extra virgin olive oil
1/4 cup spring onion
one baby cos lettuce, shredded
2 radish, julienned
1/2 and avocado, cubed
Mayonnaise
1 cup cashews soaked overnight or in hot water for 1-3 hours
2 Tbs parsley
2 Tbs chives
1 tsp lemon zest
juice of 1 lemon
1 Tbs extra virgin olive oil
1/4 cup water
salt and pepper
Directions
Marinate the chicken in the oil, oregano, lemon zest and garlic. Add a pinch of salt and a grind or two of black pepper. Leave for 15 minutes while you prepare remaining salad ingredients and the mayo.
Mayonnaise: drain cashews then place all ingredients in a high speed blender or similar and blitz until smooth and creamy. Check seasoning and add salt and pepper. The consistency should be similar to whole egg mayonnaise. Add more water to thin if required. Set aside.
Heat a large non stick pan on medium high heat and once hot add the chciekn. Cook for a few minutes on eather side or until golden.
Toss together the salad ingredeints and the spread over a platter. Spoon over a few soonfuls of the creamy dressing and add the chicken. Eat!
