This is the king of the hidden veg smoothies. The zucchini adds all the goodness of this delicious summer vegetable to what essentially tastes like a banana and cinnamon smoothie. Ideal.
I started having this in the first week of the new year as I was feeling the need to have light, cold breakfasts (hello summer!) but also knew I’d been slacking on my vegetable consumption big time. The first time I made it my nieces and nephew got in on the action too and were none the wiser to the extra ingredient in their smoothie and I was told it was ‘yummmmmm’. Win!
You can peel or not peel the zucchini, it’s totally up to you. If you don’t peel it the smoothie will be more green and taste a bit more like zucchini but it’s so subtle like adding a small amount of spinach.
I’m all about using frozen bananas in smoothies as it adds such a lovely fluffy thick shake quality. Freeze them in bite sized pieces in tupperware or reusable zip lock bags, this makes it easier for your blender to get it’s job done and peeling whole frozen bananas is a pain.
Serves 1
Directions
1 frozen banana (see above)
1 small zucchini (peeled if you want a less green finish)
2 Tsp white chia seeds (colour only effects how things look)
1/2 cup milk of choice (almond, oat, coconut and dairy all work well)
3 cubes of ice
1/2 tsp cinnamon
1/2 tsp vanilla extract
Directions
Place all ingredients in your blender and process until smooth. Finish with a sprinkle of cinnamon.
Drink!
