It’s the first meal plan post of 2019! And it traditional January in Australia style they’re going to be filled with beachy backyard summer vibes. Mixed with a good dose of post new years need to live that healthy life vibes. Sounds good right?
The blog will also be back to business as usual next week with loads of new recipes coming your way as the little break I gave myself is officially over:)
Let’s get this year started shall we?
Plan A
Day 1: Herb Crusted Salmon with a Shaved Asparagus, Fennel and Broad bean Salad, something good for your brain to get things started.
Day 2: Summer Chickpea Salad with Feta, light and perfect for work lunches if you’re back this week!
Day 3: Ponzu Prawn Black Rice Poke Bowls, this bowl of god ness always makes me feel better.
Day 4: Tomato and Parsley Salad with A Miso And Extra Virgin Olive Oil Dressing. This winning combo is perfect over a slice of sourdough as a light supper.
Day 5: Hummus with Grilled Chicken Herb and Lemon Salad, hummus and salad is my go to.
Plan B
Day 1: Summer Chickpea Salad with Feta, perfect with a soft boiled egg.
Day 2: Fragrant Dahl with Chickpeas, Zucchini and Spinach, the perfect thing for those cooler summer days.
Day 3: Tomato and Parsley Salad with A Miso And Extra Virgin Olive Oil Dressing. You can make a meal from this with a slice of toasted sourdough.
Day 4: Fried Tempeh, Black Rice and Edamame bowl with Golden Beets.
Day 5: Basil, Charred Sweetcorn and Buffalo Mozzarella Pasta, this is summer in a bowl.
The bonus? Strawberry and vanilla granita please!
