This is the second to last meal plans post for the year! There won’t be one next Sunday as I just feel like you won’t need them in the Christmas rush so this week I’ll be including some tips and recipes that are ideal for using Christmas leftovers! Bookmark this post for the week after Christmas people!
I’ll get one more Party season menu to get out to you this week too because it’s on all our minds right now! Yesterday I had my second Christmas lunch of the season and we made an amazing spread (you can stalk it on my Instagram) involving prawns, salads, chicken, trifle, and meringues. We also had the best dress code: A Very Mariah Christmas and did regifting bad Santa (regift a past present you have never used and then you all get to steal!).
But enough about Christmas.. meal plans time and this is one of my favourite lists ever as using up leftovers is my thing. Probably in my top 3 skills. I’m a super interesting person, promise….
Plan A
Day 1: Roast Chicken Noodles are always a great way to use leftover roast chicken or Turkey! Or make with a rotisserie chicken.
Day 2: Crispy Rice Bowl with All the Green Things, a great way to use leftover vegetables and grains.
Day 3: You can make this Cauliflower and Thyme Carbonara with leftover Christmas Ham
Day 4: Pesto, Broccoli and Potato Salad, a great way to use up leftover peas and potatoes if you’re doing a traditional Christmas dinner. Perfect for a boxing Day BBQ too.
Day 5: Salmon, Zucchini and Dill Potato Cakes. You can use any leftover cooked fish in these!
Plan B
Day 1: Pesto, Broccoli and Potato Salad, great to make from leftovers but also just great to eat.
Day 2: Root Vegetable Fritters with Avocado and Pickled Radish Salsa – if you have leftover root vegetables form your Christmas feast this is a great way to use them.
Day 3: Garlic and Lemon Linguini with Blistered Cherry Tomatoes and Basil – basic and perfect
Day 4: Crispy Rice Bowl with All the Green Things – great lazy dinner!
Day 5: Summer Chickpea Salad with Feta, because you’ll need to squeeze a salad in there somewhere!
Get some Christmas baking in this week and try these Strawberry and Basil Friands – no traditional but certainly seasonal!
