It’s here! My Christmas menu! It’s ideal for when you’re feeding a whole bunch of different needs and al the recipes can easily be doubled etc to feed the amount of people you plan on having. it’s also totally aimed at a Sputhern hemisphere audience with lots of seafood options and salads in there too. I hope you love it. I’ll do a vegetarian menu next week too!

Appetisers, there has to be prawns. I either serve them with a saffron sauce or do the below tostadas, you can use corn chips to save time!

The Main Show
I’m a big fan of doing a whole lot of vegetable sides with two proteins. This recipe for chicken can easily be made for turkey if you’re serving more people. If so brine it for an extra day and adjust cooking times.
Maple Glazed Roasted Chicken with Broccoli – my favourite!
Roasted Snapper and Fennel with Chilli, Lemon and a Cashew Tartar – you can easily swap the snapper for Salmon to feed more people.
Snow Pea, Feta, Almond and Asparagus Salad – the flashes of radish agaisnt the green make this look lovely and festive.
Za’atar, Oregano and Garlic Hasselback Potatoes – the ideal show stopper potato!
Cauliflower, Pomegranate and Haloumi Salad – Pomegranate just makes everything look festive
Dessert
Baked Chocolate Cheesecake – a little less traditional but oh so delicious!
Strawberry and Cream tarts – these are simple to make, look very festive and so delicious.
