Confession time: I’ve eaten tofu just once since I’ve been away and that was in ma po tofu which isn’t even a vegetarian dish. And this is super unusual because it’s usually a once a week staple for me. So in ode to the missing tofu in my life I have 7 ways to eat this delightfully versatile food for you;)
I love baked tofu, it makes it go super crispy on the edges and I’m all about great texture. The satay dish below was my entry into loving tofu. Since that dish I’ve experimented with cooking it lots of different ways and even with using silken tofu. I’ll hopefully be including some sweet tofu dishes soon too as silken tofu makes a delicious vegan mousse.
Crispy Satay Tofu with Coconut Rice and Cucumber and Avocado Salad, honestly this is the tofu gateway dish for any of you that are reading this post out of spite for tofu.
Tofu and Spinach Pot Stickers: these delicate dumplings are a great vegan option.
Miso and Ginger Tofu Curry, tofu is so good in curry as it soaks up the flavours of the sauce, I like to lightly pan fry it first.
Crispy Tofu with Broccolini and a Miso Broth. The light and crispy texture on this tofu contrasts with the silky centre perfectly.
Rice Noodle Bowls with Thai Peanut Sauce and Sesame Tofu Schnitzel Strips, I’m a crispy chicken strips fan and this is a great vegan version of that!
Silken Tofu with Spicy Mushroom Sauce, this is sort of like a vegan mapo tofu YUM.
Korean BBQ Tofu Bowls – sticky sweet Korean-ish barbecue sauce coats the tofu in this bowl.
