This week I’ve been travelling through Utah, Colorado and am now in Texas! To see what I’ve been up to on the road check my Instagram! You’ll also start seeing some of the food inspo I’ve got a long the way in upcoming recipes. But for now I have some meal plans for you!
This week is all about colour and variety so we’ve got a little bit of a trip across the world happening with Middle Eastern, European, Asian and Mexican things in store. I figured if I was going to be travel spamming all of you then at least anyone not on holiday could take a trip via their own kitchen;)
Exploring the cuisines of other cultures is a fantastic way to get to know that culture and to get to know flavour in general so try something new this week!
Plan A
Day 1: Sundried Tomato and Roast Capsicum Pesto Pasta, I love this pesto and use the leftovers as a spread in sandwiches!
Day 2: Chicken and Corn Enchiladas with Homemade Sauce, there’s some tricks and tips in this post if you want to take some short cuts on this recipe.
Day 3: Vegetarian Huevos Rotos, this healthy version of a classic comfort food is the perfect mid week pick me up.
Day 4: Sesame Ginger and Chicken One Pot Miso Ramen, I love minimal dishes when I’m cooking.
Day 5: Israeli Cous Cous Salad with Pomegranate and Sumac Prawns, I love the fresh and zesty flavours of this dish.
Plan B
Day 1: Quick Spicy Vegetarian Ramen, this cheats ramen is still super tasty.
Day 2: Sweet Potato and Black Bean Enchiladas, these vegetarian enchiladas are amazing.
Day 3: Sundried Tomato and Roast Capsicum Pesto Pasta, who said pest needs to be green?
Day 4: Pearl Barley, Asparagus and Zucchini Salad, this vegetarian salad is super filling and full of fibre, protein and healthy fats.
Day 5: Vegetarian Huevos Rotos, have breakfast for dinner this Friday!
And the bonus recipe is a cookie! Double Chocolate Tahini Cookies to be exact. Do it.
