I’m holidaying In Byron Bay this week and my friend could not have timed her wedding better – I get to avoid a horrendous cold snap in Melbourne and trade it for sunshine and sand between my toes. Happiness overload.
There’s something about being in Byron that makes me want to live my glowiest life. I’ve been up by around 7 every day (not unhear dof in normal life but this is a holiday ya know?) doing some sort of exercise and having a smoothie for breakfast. When exercise is a walk along the beach, a walk to the lighthouse to whale watch or yoga on the golden sand it’s super easy to motivate myself. I even went for a run along the beach and I haven’t gone for a run in 3 months… shock, horror.
It also has me eating seafood and loads of green things so it seems fitting that this weeks 7 ways with post is… Broccoli! I love broccoli, I think I always have. It’s so good just lightely steamed and seasoned and tossed with olive oil, garlic and chilli and roasted til crisp. I went through a stage when I first moved out of home of just eating stir fried broccoli tossed with garlic, chilli and slivered almonds, on rice. I had no money but this was my go to instead of 2 minute noodles. This long love affair with green things is probably why I have ‘eat your greens’ tattooed on my fingers:)
This weeks 7 Ways With…
Broccoli, Kale and Walnut Chopped Salad this salad is full of goodness and flavour.
Broccoli and Feta Dip, creamy, salty and all about that broccoli
Pesto Broccoli and and Baby Potato Salad, I love a pesto potato salad and the fresh broccoli adds a sweet balance to this.
Roasted Broccoli with Pine Nuts and Feta, roasted broccoli is one of my favourite things
Broccoli and Parmesan Fritters, fritters are a great way to get extra vegetables in your life.
Maple Glazed Roast Chicken and Broccoli, roasted broccoli again but it soaks up the flavour of the chicken it’s nestled around.
Green Cauliflower Fried Rice, I like my cauliflower rice way better when it has some flecks of broccoli through it.
