I just realised this week that I only have 3 weeks left in Melbourne before I go. Which also means 3 more weeks of winter recipes (even if the signs of spring have begun) before I’m back and it’s spring time! So let’s lean into the wintery vibes with this weeks meal plans shall we? Turn the oven on.
I think I’m not meant to be discussing the weather on these meal plan posts anymore because it became my go to opener. But seasons isn’t weather right?! This is a food blog I sort of have to mention seasons as it’s a guiding factor in the food we eat! Well it should be… in Australia we have some pretty lucky times and Queensland to give us all the summery foods pretty much year round. But still, Queensland isn’t exactly that close to Melbourne so in terms of local produce seasons are a big deal.
This week I’ve been enjoying leafy greens, carrots and other root vegetables as well as a whole tonne of citrus fruit. This is totally reflected in the two meal plans below.
Plan A
Day 1: Spiced Carrot and Lentil Soup to warm you up at the start of the week.
Day 2: Rainbow trout and Radicchio Salad with a Goats Cheese Dressing. This warm salad is quick and easy to make on a weeknight.
Day 3: Thai Red Curry Noodle Soup, Ramen Style – no week is complete without some sort of noodle dish apparently!
Day 4: Chicken and Corn Enchilada with Home Made Enchilada Sauce – cheese, tomatoey baked goodness!
Day 5: Let’s just eat cheese and egg tacos and call it dinner shall we?
Plan B
Day 1: Silken Tofu with Spicy Mushroom Sauce, this is such a yummy combination of flavours, textures and temperatures.
Day 2: Spiced Carrot and Lentil Soup, make some for your lunches this week.
Day 3: Cheese and Egg Tacos for dinner please. One way to deal with hump day right?
Day 4: Sweet Potato, Spinach and Cashew Curry – this is a dry style curry and perfect with rice or quinoa.
Day 5: Pesto, Broccoli and Baby Potato Salad and a couple of soft boiled eggs to make a meal out of it.
This week’s bonus is my simple green smoothie recipe because I’m a little over porridge for breakfast…
