Well hello Winter, you’ve really made your arrival felt haven’t you?! With 3 degree mornings in Melbourne I’m leaning even further into warm soups, and things to roast in the oven. This weeks meal plans reflect my efforts to keep warm!
As promised there’s some gluten and dairy free recipes involved thanks to the feedback on my last post as well as the wintery recipes that were requested. Lots more yummy things to come to the blog this week.
Iim off to Adelaide for a night next week so any top tips on places to eat or visit in the one day and night I’m there would be oh so welcome! I love hearing your ideas:)
Now for those meal plans, we have 2 as per usual the first one contains meat and seafood and the second one is all vegetarian.
Plan A
Day 1: Moroccan Spiced Chickpea and Tomato Soup, served with a dollop of yoghurt this soup is lovely and comforting.
Day 2: Baked Snapper stuffed with fennel, lemon and chilli served over cashew tartar and topped with roasted chickpeas. This fish is so easy to prep and a recipe that aims to be as waste free as possible.
Day 3: One Pan Chicken Thighs with Tomato, Chickpea, Basil and Mozzarella – serve with couscous or sourdough to soak up the lovely sauce.
Day 4: Creamy Pesto Noodles with Roast Tomatoes and Chickpeas, this is a vegan and gluten free recipe but you could easily add some chicken or prawns instead of the chickpeas.
Day 5: Maple Glazed Roast Chicken and Broccoli with Hassleback Potatoes, my go to roast.
Plan B
Day 1: Creamy Pesto Noodles with Roast Tomatoes and Chickpeas – you can make this recipe with a mixture of zoodles and pasta or do all zoodles if you’re not as hungry.
Day 2: Moroccan Spiced Chickpea and Tomato Soup, warm yourself from the inside.
Day 3: Roasted Brussell Sprouts with Pomegranate Dressing and Almond Gremolata, serve it over hummus and with flat bread to scoop up and you have yourself a meal.
Day 4: Cauliflower and Potato Vegan Massaman curry, is there anything as comforting as a curry on a winter night?
Day 5: Pearl Barley Risotto with Roast Pumpkin, Sun dried Tomatoes, Basil and Feta. You can use pesto rather than basil if you can’t get any basil at this time of year.
I think it’s time I made this sesame caramel slice again as it’s been way too long between tahini caramel experiments.
