I’ve been working from home so much this week and I have. made. so. much. food. And eaten it. Lucky it’s been wintery vibes and all I want to do is stay in so the food has come in handy. no ordering in necessary.Â
Unfortunately one of my housemates is doing the gut makeover I did last year, I mean it’s fortunate for her but unfortunate for me as there’s so much food to eat and not much of it has been gut makeover friendly. I’m a legume and sourdough addict. But that does mean there’s plenty of delicious things coming up on the blog for you.
I’ve tried to eat a rarely wide range of plant food, and lots of it this week to balance out some of the more indulgent eating that’s been going on and I feel like it’s keeping me feeling good so yay for that. That wide variety is definitely reflected in the meal plans below.
Speaking of indulging, what are you doing for mother’s day? You should be baking these delightful Strawberry, lemon friands!
But now to the week ahead:
Plan A
Day 1: Moroccan Spiced Chickpea and Tomato Soup, this soup reminds me of one I had many times as part of banquets in Morocco, the chickpeas add fibre and protein to make it more filling.
Day 2:Â Buttermilk Baked Chicken with roasted broccoli, marinade the chicken the night before if you remember.
Day 3: These Cauliflower Melts are such an easy midweek supper, serve with a side of greens for extra variety if you like.
Day 4: Prawn and Pumpkin Yellow Curry, it sounds like an unusual combination but the sweet pumpkin with the delicate prawns and the curry spices is such a great balance. Plus you’re making it from scratch in 45 minutes.
Day 5: Asian Meatballs on Rice Noodles with a Chilli, Ginger and Sesame Sauce. Be like me, make your own take away food 😉
Plan B
Day 1: Tofu and Kale Creamy Korma Curry. Cashews are used to make this creamy sauce so it’s completely vegan too.
Day 2:Â Moroccan Spiced Chickpea and Tomato Soup Every week is a soup week at the moment!
Day 3: Lentil ‘Meatballs’ with a coconut curry sauce. These meatballs are so moorish and the noodles and curry sauce bring everything together.
Day 4: Mushroom, Kale and Lentil Sausage Rolls. It’s winter, eat some pastry.
Day 5:Â Cauliflower Melts the perfect lazy supper food, and that creamy looking sauce? It’s cauliflower.
This weeks bonus? Lemon delicious porridge. It’s as good as it sounds.
