So I heard this week that Melbournians just love to talk about the weather. And i realised that I do that so often on this blog that it’s a little embarrassing. Maybe it’s because it’s so damn unstable in this corner of the world. It’s been summer weather all week with balmy evenings and now it’s miserable, cold, windy and raining. And the weather clearly has an effect on what I feel like eating so it’s totally okay that I’ve just spent a paragraph talking about it…
Autumn food is the best, you can eat a mixture of salads and then more winter foods like soups and stews. And of course pasta. I made a delicious mushroom pasta this week and it was soooo good and obviously is making an appearance in this weeks meal plans along with a whole lot of other delicious things!
I’ve also got some exciting news, the Essential Being Retreats website is up and running and you can book for the next day retreat on the 5th of May. It’s a beautiful day filled with yoga, meditation and good food. The focus is on taking time out from your likely hectic schedule and learning to balance your mind, body and spirit. Jess runs the retreats and is an amazing facilitator. I’m terrible at meditation and usually really struggle to focus but with her help I left the day feeling lighter and with a fresh outlook. I make the lunch and snacks on the day and give some advice about how to eat and enjoy healthy, wholesome, real foods. We also discuss eating to enhance mood, calm and balance the mind and body and how to increase plant-based foods in your diet. It’s such a lovely day and would love to see you there!
For now… here’s some meal plans including lots of wonderful plant foods to keep you going:
Plan A
Day 1: Mushroom and Spinach Fettuccine with lemon and walnuts, this sauce just coats the pasta for the perfect autumnal bowl of pasta.
Day 2: Rump Steak with Beetroot, Feta and Green Beans this is the perfect easy mid week meal.
Day 3: Salmon, Zucchini and Potato Cakes, I’m obsessed with these because they’re super easy and you can freeze them and have them for breakfast, lunch or dinner.
Day 4: Crispy Tofu and Broccolini and a Miso Broth this is one of my favourite comfort foods, but still really light.
Day 5: Autumn Chicken Tagine with Almonds and Apricots – full of flavour and really easy to make.
Plan B
Day 1: Vegetarian Khoa Soi Style Soup – noodle soup is the most delightful way to start the week.
Day 2: Crispy Tofu and Broccolini and a Miso Broth this is one of my favourite comfort foods and the flavours are so clean too.
Day 3: Mushroom and Spinach Fettuccine with lemon and walnuts, mid week pasta anyone?
Day 4: Sweet Potato, Spinach and Cashew Curry, super easy and super flavoursome this is a drier style of curry.
Day 5: Vegetarian Lasagne with Eggplant Ragu and Cauliflower Sauce – this is not a quick dish but it’s so flavoursome and freezes really well too!
And this weeks bonus recipe? Persimmon Galette because my backyard is full of them.
