Meal Plans Week 55

We’re speeding through February at a frankly alarming rate and I really don’t want summer to come to an end. I love the warm weather and long nights with beautiful light that come with Summer and I’m definitely not anywhere near ready for that to end. So this week I’m going to keep celebrating the warmth with summer appropriate food.

For me that means lots of seafood and all the pretty colours of vegetables. I’ve been recipe testing a lot of flat bread and pizza recipes lately so I’m craving a little less carb this week. My arse is in need of a little less carb too! I always find this harder to do on my vegetarian days… anyone else?

Plan A

Day 1: Korean BBQ Tofu Bowls: So much flavour in these bowls!

Day 2: Crispy Barramundi with Citrus Salad, I usually have this with a side of steamed or grilled greens.

Day 3: Avocado and Egg Rice Paper Rolls with Peanut Dipping Sauce, I’m seriously craving some rice paper rolls this week and this vegetarian version is delicious.

Day 4: Prawns and Chickpeas with Paprika and Saffron, this is one of my favourites, serve it with a pea and zucchini salad on the side

Day 5: Bok Choy and Pork Soba Noodle Bowl, take out at home.

Plan B

Day 1: Avocado and Egg Rice Paper Rolls with Peanut Dipping Sauce: Make extra for your lunch!

Day 2: Korean BBQ Tofu Bowls: So much flavour in these bowls, and look at the bright colours.

Day 3: Coconut and Ginger Eggplant Curry, I love eggplant in a curry as it just soaks up so much flavour.

Day 4: Fragrant Dahl with Chickpeas, Zucchini and Spinach this is as summery as a dahl gets for me!

Day 5: Cauliflower and Hummus Pita Pockets, I’m suggesting these so soon again as they’re amazing!
