This dip is so flavoursome, step aside spinach dip broccoli and feta dip is where it’s at! It’s got this delicious sharpness from the feta and the freshness of the broccoli and lemon that together make it addictive.
I love dips. An cheeseboards. And snacking in general. But in truth I don’t actually snack a lot, so I often end up eating dips either as part of cheeseboard with wines and friends and fun times or as part of my meal. Some pita crisps, crudites and a yummy dip and lunch is sorted. I also love dips spread on sourdough for breakfast topped with a poached or fried egg and I’m full ’til lunch.
This particular dip is fantastic like that, it’s also great in a rainbow bowl for lunch. Plus it’s ridiculous easy to make. Just steam some broccoli and then blend with the other ingredients and you’re good to go. And let’s be honest, broccoli and feta is such a great combination always!
Ingredients
200g feta
2 Tbs extra virgin olive oil
50 ml water
1 Tbs lemon juice
2 Tbs parsley
1/4 cup spring onion
2.5 cups steamed and cooled broccoli (1 small to medium head, stalk included)
Directions
Place feta in a small food processor along with water, lemon juice and extra virgin olive oil and blitz until smooth. Add the remaining ingredients and blitz for a couple of minutes or until mostly smooth. You can have it as chunky or smooth as you like really!
Serve with crudites and crackers or flatbread. Or spread on sourdough with an egg on top.
