These are so simple I’m almost embarrassed to post the recipe. Minimal ingredients but maximum flavour and the perfect thing on hot summer days or to grab for a light and yummy dessert.
You only need 5 ingredients (the 6th one is optional) to throw these together and they’re the most convenient treat to have in your freezer. They’re also the kind of treat that’s healthy enough for you to eat for breakfast. There’s no added sugar as the coconut milk and banana both bring their own sweetness.
They’re also vegan, gluten free, dairy free and so on so pretty much anyone can eat them. You can add a little less cocoa if you want more of a milk chocolate flavour or for them to be more kid friendly.
Makes 4
Ingredients
2 bananas
1 cup coconut milk
2 Tbs dutch pressed cocoa powder
1 Tbs chia seeds
1 tsp vanilla extract
Optional: 2 Tbs shredded coconut
Directions
Place all ingredients excluding the shredded coconut in a high speed blender and blend until smooth.
Divide between 4 popsicle moulds and place a popsicle stick in each one. Sprinkle the shredded coconut around the stick until the base of the popsicle is completely covered. Freeze overnight or for at least 6 hours until very firm.
You may need to briefly place the moulds in warm water in order to remove the popsicles once set.
